Swedish food part two
Today I didn't have to go to the market because I already bought the stuff yesterday! So that was kind of cool. My sister Heather came over for a "lunch" of swedish pancakes with lingonberries. I had already started making them when she came over. They were looking kind of like swedish pancakes but then she showed me how to make them really thin.... I'm going to have her explain it... it's really cool!
Okay, Heather here... it's what I call the "swirling" method. What shannon was doing was pouring the ladel of batter into the pan and just leaving it... rookie mistake. :) What I did, was poured in the batter, then I picked up the pan and swirled the batter around, making it nice and thin! Besides looking cool, it really does make them taste better... less rubbery. So there... that's my part. :)
Okay SHANNON here... nice heather...
Anyways... it WAS better tasting... I wouldn't really say rubbery I would say doughy if thats a word... :-)
It was delicious! The lingonberries taste kind of like cranberries and we put powdered sugar on top.... YUM! Heather has a bunch of tasty words to describe how scrumptious they were......
[Heather] The lingonberries had a sort of tartness to them... and then mixed with the creaminess of the butter, and the sweetness of the powdered sugar--"ljuvlig! (delectable)" To DIE for! :)
[Shannon] So as you can see... they were a success!
To Sweden and back all before dinner... :-)

Swedish Food part one
Today is a short adventure. I woke up today feeling like complete shit because my allergies flared up and I felt like doing nothing but laying around.
Trip #4 to international food market
I did not feel good so I was deffinetly in the mood to get in and get out.
I got a box of swedish pancake mix, and jar of Ligonberries, and two types of cookies. The first ones are called "Ballerina", a cookie sandwhich made of dark and white cookie filled with chocolate, hazelnut creme that shows through a hole in the top. The second ones are called "Singoalla", a cookie sandwhich make of white cookies filled with white creme and topped with a dab of firm raspberry goop.
Because of how I was feeling I never did make my swedish pancakes. I laid in bed and watched TV with Neil. At about 11:30 I looked over at Neil and said "ready to try something new?" So we ate the cookies. :-) They were both delicious! The second one though was amazing,..... the creme was to die for! it was so sweet and so silky... deffinetly good.
So, we didn't try everything we planned, but we still tried something new! It helped me realize that it's not about perfection, but thinking about making life special on a daily basis.
And even though I was sick,... It was.
"I morgon kommer jag att försöka igen!"
